    Have the Primary Maintenance Person complete the task while you observe. Follow along using the guide below to ensure that all steps are followed. If all steps are completed properly, continue to the exam portion. If not, please coach and schedule the next attempt.
  • Protective Gear

    The following protective gear must be worn when operating the built-in filtering system or handling hot oil or hot metal parts:

    • Face shield
    • Apron
    • Heat-resistant gloves, at least 14 inches long

    Action Description
    Put on personal protective equipment (PPE)

    Put on the approved appropriate PPE.

    Turn on Turn on fryer by pressing and holding the power button. 
    Skim fryer Skim large particles from the oil before draining it.
    Check temperature Make sure the oil has reached its correct cooking temperature before beginning. Oil that is too cold will not filter properly.
    Press and hold filter button on either side for 3 seconds Accesses the FILTER MENU
    Press down arrow (info) When the filter menu is displayed, pressing the down arrow (INFO) button when MAIN FILTER is displayed advances to the daily maintenance filter.
    Press the √ (1) YES button. When MAIN FILTER is displayed YES NO press the YES 1 √ (check) button to filter.
    Press the √ (1) YES button. When MAINT FILTER? Is displayed press the √ (check) button to confirm operation.
    Let oil drain When FILTERING is displayed, hot oil should drain into the filter pan. If vat is clogged with crumbs, the oil may not drain or will drain very slowly, carefully use filter brush to push crumbs down drain. CAUTION: don’t leave filter bush in drain pan as this could damage your drain valve during the maintenance filter.
    Take out wire basket racks Remove the wire basket rack from the bottom of the fryer. Place the wire basket rack in a safe, stable location. Caution: use heat resistant gloves to remove wire rack, wire racks will be very hot.
    Press the √ (1) YES button Once vat is clean, the display shows SCRUB VAT COMPLETE? Yes No, press the √ (1) YES button.
    Press the √ (1) YES button When WASH VAT? Is displayed, pressing the √ (1) YES button starts the washing process.
    Let oil recirculate When WASHING is displayed the fryer will wash the crumbs from the bottom of the fryer down the drain.
    Press the √ (1) YES button if another wash is necessary, otherwise press X (2) NO button When WASH AGAIN? Is displayed, pressing the √ (1) YES button will start another wash. If another wash is not necessary, press the X (2) NO button.
    Replace basket rack Using a clean, sanitizer-soaked towel, wipe around the drain and inside the door. Close the door and replace the basket rack. Discard the towel into the soiled towel bucket after each use.
    Let fryer rinse When RINSING is displayed, the vat fills with oil and then drains the oil to rinse the fryer.
    Press the √ (1) YES button if another rinse is necessary, otherwise press X (2) NO button When RINSE AGAIN? Is displayed, pressing the √ (1) YES button will start another rinse. If another rinse is not necessary, press the X (2) NO button.
    Press the √ (1) YES button When POLISH? Is displayed, pressing the √ (1) YES button will start the polish.
    Let oil recirculate When POLISHING is displayed, the fryer will recirculate the oil for 5 minutes to remove small particles and absorb the chemicals that break down oil.
    Press the √ (1) YES button When FILL VAT? Is displayed, pressing the √ (1) YES button will start refilling the fryer.
    Refilling the fryer When FILLING is displayed, the fryer will fill and once filled will turn off the pump.
    Press X (2) NO button if the oil level is below top oil level line, otherwise press √ (1) YES button When IS VAT FILLED? And YES NO is displayed, press √ YES button if the oil is at the top oil level line. Press X (2) NO if oil is below level so pump can continue to pump oil in the filter pan.
    Turn on fryer

    If you will be using the fryer again that day, turn the fryer’s power switch to on by pressing and holding the power button. If the fryer will not be used until the next day, leave it turned off.

    Before turning on the fryer, make sure the fry vat contains oil.

    Note: Operating the fryer without oil may cause a fire or damage the fryer. Also make sure the ventilation system is on, the ventilation filters are in place, and the grease collection cup in the hood is in place and is empty.

    Clean other fryers Repeat this process for each of the remaining fryers, For Chicken Fryers, be careful to clean them in the proper order (with Filet-O-Fish last).
    Clean up spills Caution: Remember to keep the floor around the filtering area free of splatters and spills. If spills occur on the floor, clean up immediately with KAY SolidSense Floorcare solution and a mop and place Caution Wet Floor signs in the area.
    Take off PPE and clean When finished with filtering and cleaning the fryer vat, remove the apron, heat-resistant gloves and face shield. Take to back sink and clean. Hang to dry.

     

    Be sure that while the Primary Maintenance person is waiting for the filtering and polishing steps, they are cleaning in and around the fryer including inside, wheels, and the hood.  It should look line new, inside and out!

Use the Ecolab Hi-Temp Detail Brush to scrub any hard-to-reach areas such as in between coils and in corners of vats. Be very gentle when wiping the computer sensing probes; they can be damaged easily. (All Fryers) Clean around AIF and ATO sensors with a screwdriver or similar object to remove any sediment from around the sensors and press the √ (check) button when complete.
    Scrub and clean the large oil level sensor then press the √ (1) YES button√ (1) YES button Once vat is clean, the display shows SCRUB VAT COMPLETE? Yes No, press the √ (1) YES button.
    Press the √ (1) YES button When WASH VAT? Is displayed, pressing the √ (1) YES button starts the washing process.

    Stir oil Slowly stir the oil with the goofer stick to equalize the oil's temperature in the fryer.
    Press Filter Hand Pressing the filter (hand) button accesses the filtration menu.
    Press MAINTENANCE FILTER When the filter menu is displayed, pressing the MAINTENANCE FILTER button starts the daily maintenance filter.
    Press the √ (1) YES button. When MAINTENANCE FILTER is displayed press the YES 1 √ (check) button to confirm operation.
    Press the √ (1) YES button. When WEAR PROTECTIVE GLOVES is displayed press the √ (check) YES button to confirm.
    Press the √ (1) YES button. When ENSURE OIL PAN AND COVER ARE IN PLACE is displayed press the √ (check) YES button to confirm.
    Let oil drain When DRAINING IN PROGRESS is displayed, hot oil is draining into the pan. If the drain gets clogged, gently use the goofer stick to free it. Remember to be careful when using the goofer stick to avoid damaging the welds or drain valve.
    Scrub fryer with KAY QSR Fryer Cleanser and clean around sensors, then press the √ (1) YES button When SCRUB INSIDE VAT AND BETWEEN HEATERS – PRESS CONFIRM WHEN COMPLETE is displayed, scrub the side, front, and back walls of the vat with the Ecolab Hi-Temp Pad Holder pad and KAY QSR Fryer Cleanser. Use the Ecolab Hi-Temp Detail Brush to scrub any hard-to-reach areas such as in between coils and in corners of vats. Be very gentle when wiping the computer sensing probes; they can be damaged easily.
    Scrub and Clean the sensors and press the √ (check) YES button When CLEAN SENSORS – PRESS CONFIRM WHEN COMPLETE is displayed, clean the oil level sensor with a no scratch pad.     Let fryer rinse When RINSING is displayed, the vat fills with oil and then drains the oil to rinse the fryer.
    Press the √ (1) YES button if another rinse is necessary, otherwise press X (2) NO button When RINSE AGAIN? Is displayed, pressing the √ (1) YES button will start another rinse. If another rinse is not necessary, press the X (2) NO button.

  • Congratulations on passing the verification!!  Your increase will be reported to payroll for processing.  It will take 1-2 payrolls to process.  If after that timeframe the raise does not appear, it is the Primary Maintenance's responsibility to let payroll and the Coordinator know.  It is the Primary Maintenance Person's responsibility to continue to adhere to these standards we verified today.  In the event that these standards are not kept, this increase could be removed.
